Chicken Drumstick Fry

Ingredients Chicken Leg Pieces - 3nos: Pepper powder - 1tbsp Ginger Paste - 1 tsp Garlic Paste - 1 tsp Lime Juice - 2 tbsp Salt - as required Chili Powder - 2 tbsp Egg White - one Corn Flour - 1 tbsp Oil - as required to fry chicken Preparation Method Wash and drain the entire water from chicken. Make some slits in the chicken pieces. Marinate the chicken with Pepper powder, Ginger paste, Garlic paste, Lime Juice and Salt and keep that in refrigerator for about 30mins: Mix together Egg white, Chili powder, Corn flour and a pinch of Salt and make a thick batter. Take the chicken pieces from refrigerator and coat each pieces with the above mentioned batter. Keep the chicken pieces in refrigerator for another 30mins:. Heat Oil in a deep pan and deep fry chicken pieces till all the sides are brown (After putting the chicken pieces in the heated oil, reduce the flame to medium and then cook). Parippu Vada

Ingredients Parippu (Tur Daal) - 500 gm Onion - 3 nos: (chopped) Green Chilli - 4-5 nos: (copped) Curry leaves (chopped) - 1/2 cup Coriander leaves (chopped) - 1/2 cup Coconut oil / Sunflower oil - as required Salt - as required Preparation Method Wash and soak the Parippu (Tur Daal) in water for 1hr. Drain the water and keep the Parippu in a strainer to drain out the excess water. Take small portions of the Parippu and grind using the chutney jar of the mixi (Do not make paste, just 3-4 whip is enough). Transfer the contents to a large bowl and add chopped onion, green chilli, curry leaves, coriander leaves and salt. Mix all the ingredients. Take a handful of the mix and make a ball and press the ball lightly. Deep fry in oil till both the sides become brown color. The Vada is ready to serve with plantain and tea/coffee.

Simple Cake

Ingredients All purpose flour(Maida) - 1 1/2 cups Baking powder - 1/2 tsp Eggs - 2 nos Sugar - 3/4 cup Unsalted butter (in room temperature) - 100gm Salt - A pinch Vanilla essence - 1/4 tsp Lemon juice - 1/2 tsp Milk - 1/4 to 1/2 cup Preparation Method Beat the eggs using a hand held electric mixer in a large bowl. (Use glass bowl for more soft cake). Add sugar and butter and mix at the lowest speed again for a 2-3 mins (till the sugar and butter dissolves). Mix together maida, baking powder and salt. Add this little by little to the egg-sugar-butter mix and blend at a medium speed for 4-5 mins. Add desired amount of milk to achieve the ribbon consistency for batter. Add vanilla essence and lemon juice blend for 1 more min. Preheat oven to 350 degree F (180 degree Celsius). Grease the baking tray with butter. Pour the batter to the tray. Bake in oven for 25-30 mins(or till the top of the cake become light brown) at 350 degree F(180 degree Celsius). (P
