Vegetable Kuruma

Ingredients Vegetables (Potato, Carrot, Beans, Cauliflower) cut into medium pieces - 1/2 cup each Green Peas - 1/2 cup Turmeric Powder - 1/2 tsp Onion - 2 nos: (finely chopped) Green Chilli - 3 nos: (finely chopped) Ginger - 1 inch piece (finely chopped) Salt - as required Coconut Oil - 3 tbsp Mustard Seeds - 1/2 tsp Curry Leaves - 2-3 stems (finely chopped) Grated Coconut - 1 cup Cumin Seeds - 1/2 tsp Preparation Method Cook vegetables and green peas in cup of water by adding turmeric powder and salt.  Grind grated coconut and cumin seeds to a fine paste and keep aside. In a wok bring oil to heat, splutter mustard seeds; then add ginger, green chili and onion and saute till onion become transparent. Add cooked vegetables and coconut paste; mix well and cook in low flame keeping the lid closed for about 10 mins: Check for salt; switch off the flame; add curry leaves and keep the lid closed for 5 mins: Open the lid and mix well. Vegetable Kuruma is ready to serve

Coffee Cup Cake

Coffee Cup Cake!!! When I saw this recipe in Dr.Lekshmi Nair's cookery page in fortnightly Malayalam magazine Vanitha, I really wanted to give it a try... Luckily all the ingredients were available in my kitchen, so I baked this delicious Coffee Cup Cakes without any delay.... :) All of us enjoyed the coffee flavour in the cake.... Ingredients For Cake All Purpose Flour (Maida)- 1 cup Baking Powder - 1 tsp Sugar - 3/4 cup Butter - 100 gm (in room temp:) Egg - 2 nos: Instant Coffee Powder - 2 tsp Milk - 1/2 cup For Icing Butter - 50 gm (in room temp:) Instant Coffee Powder - 2 tsp Icing Sugar - 2 cups Milk - 5 tbsp Preparation Method Swift together maida and baking powder and keep aside. Preheat the oven in 180 degree C.  In a large bowl beat together butter and sugar. Add eggs and beat well. Now gradually add the flour and mix well. Add coffee powder and milk and beat well to make a smooth batter. Line the cup cake tray with cups. Fill 3/4th of

Mango Milk Shake

Its Mango season.... Then why don't we try Mango Milk Shake that can be prepared easily at any time with very less ingredients that are always available in our home!!!! Ingredients Ripe Mango- 1 no: (finely chopped) Chilled Milk - 1/2 ltr Sugar - 5 tbsp or as required Preparation Method Add all the ingredients to the blender and blend well. Pour the shake to a tall glass and garnish with chopped mangoes. The super cool delicious Mango Milk Shake is ready to serve.

Vegetable Fried Rice

Ingredients Basmati Rice - 4 cups Water - 6 cups Carrot, Beans, Baby Corn, Capsicum - 1/2 cup each (cut lengthwise of same size) Clove - 4-5 nos: Black Pepper - 8-10 nos: Cinnamon - 1-2 pieces Onion - 2 nos: ( cut lengthwise) Cashew, Raisins - as required Salt - as required Ghee - 8-10 tbsp Pineapple   Essence  - 1/2 tsp (optional) Yellow Food Color - a pinch   (optional) Preparation Method Wash and soak the rice for about 1 hr. Drain the water and keep the rice in strainer for about 30 mins: to remove the water. Boil 6 cups of water. In a thick bottom pan or pressure cooker, heat 3 tbsp of ghee. Splutter clove, cinnamon and black pepper. Add rice and fry for 5 mins: in medium flame. Add boiled water and salt, mix well, keep the lid closed and cook for 20 mins:  (till the rice cooked and water evaporated  completely. Add pineapple essence while cooking the rice, if you like the flavor). In a wok bring 4 tbsp of ghee, roast cashew and raisins and keep aside
