Mango-Walnut Bread

Ingredients All Purpose Flour (Maida) - 2 cup Mango Puree - 1 cup Walnut (chopped) - 1 cup Sugar - 1 cup (powdered) Egg - 3 nos: Baking powder - 1 tsp Baking soda - 1 tsp Cinnamon powder - 1/2 tsp (optional) Vanilla essence - 1/2 tsp (optional) Refined Oil- 100 ml. Preparation Method Dust the chopped walnut with 1 tbsp maida and keep aside. Preheat the oven at 350 degree F. In a bowl mix together 2 cups of flour, sugar,  baking powder, baking soda and cinnamon powder.  Beat  together the eggs, vanilla essence and oil in a large bowl.  Add dry ingredients slowly to the egg mixture and mix well. Add the mango puree and walnut and incorporate well with a wooden spatula. Grease loaf pan and pour the mixture.   Bake for 55-60 mins:, until a toothpick inserted into the center comes out clean.  Take the bread from oven and allow it cool in the pan for 10-15 mins:. Cut into slices and enjoy the delicious, crunchy home made Mango-Walnut Bread....

Lemon Rice

Ingredients White Rice - 1 cup Turmeric Powder - 1 tsp Lemon Juice - 3-4 tbsp Salt - as required Ghee  or Oil - 2 tbsp Chana Daal - 1 tbsp Curry Leaves - 1 stem Red Chilli - 2 nos: Fenugreek  - a pinch Preparation Method Add turmeric powder, salt and 1/2 tsp ghee to the rice and cook in 2 glasses of water and keep aside. (make sure that the rice is not sticky) In a wok bring ghee or oil to heat and saute chana daal, red chilli and curry leaves. Add fenugreek, rice and lime juice and mix well. (adjust lime juice according to your taste).. The hot and tangy Lemon Rice is ready to serve with raitha.

Chakkakuru Mezhukkupuratti / Stir Fried Jack Fruit Seed

Ingredients Jack Fruit Seed - 20-25 nos:  Red Chilli Powder - 1/2 tsp Pepper Powder - 1/2 tsp Turmeric Powder  - 1/4 tsp Garlic - 10-12 petals (crushed) Black Pepper - 1/2 tbsp (crushed) Coconut Pieces - handful Salt - as required Oil - 2 tbsp Mustard seeds - 1/4 tsp Preparation Method Remove the outer skin of jack fruit seeds, cut into thin pieces, wash and keep aside. To the cleaned jack fruit seeds add chilli powder, pepper powder, turmeric powder, salt and 1/4 cup waster and cook well. Once the  jack fruit seeds are cooked, evaporate the excess water by keeping the lid open in high flame. In a wok bring oil to heat and sputter mustard seeds. Add garlic, curry leaves and coconut, saute till the coconut and garlic starts to change the color. Add in the crushed pepper, cooked jack fruit seeds and saute in low flame for 8-10 mins: The hot and spicy Chakkakuru Mezhukkupuratti (Stir Fried Jack Fruit Seed) is ready to serve with rice or kanji.
