Carrot-Dates Cake is the super moist cake that can be made very easily. Carrot and Dates are really good for health. But most of us, especially kids, are so hesitant to have it. But if you bake a cake out of them, then everyone will love it. To make the cake more healthier whole wheat flour can be used instead of plain flour....
Ingredients- Carrot (grated) - 3/4 cup
- Dates (sliced) - handful
- Wheat Flour - 3/4 cup
- Sugar (powdered) - 1 cup
- Butter - 100 gm (melted)
- Baking Powder-3/4 tsp
- Baking Soda -3/4 tsp
- Egg - 2 nos:
- Vanilla Essence - 1 tsp
- Swift together flour, baking powder, baking soda and keep aside.
- Beat together egg, sugar and butter.
- Add flour spoon-by-spoon and blend to a smooth batter.
- Add grated carrot and dates and mix well using a wooden spoon.
- Add vanilla essence and mi well.
- Keep the batter aside for 10-15 mins:
- Preheat the oven at 210 degree C.
- Pour the batter to a greased cake tray and bake for 35-40 mins: (till the tooth pick inserted comes out clean).
- Invert the cake to wire rack and allow it to cool down.
- Slice and enjoy the super moist, delicious Carrot-Dates Cake.
Note:- If you want to bake egg-less Carrot-Dates Cake, instead of eggs add 1/2 tin (200 ml) condensed milk.
