- Maida (all-purpose Flour) -2 cups
- Baking Powder - 1/2 tsp
- Baking Soda - 1/2 tsp
- Salt - a pinch
- Butter (in room temp) - 100 gms:
- Cherry - 100 gms (pitted and chopped)
- Grated Coconut - 1 cup
- Coconut Milk - 1.5 cup
- Egg - 2 nos:
- Sugar - 1/2 cup
- Sieve together maida, baking powder, baking soda and salt and keep aside.
- Preheat the oven at 230 degree C.
- Roast the coconut in low flame for about 5 mins: (make sure that the white color should remain, only the water has to get evaporate). Or else you can use store bought desiccated coconut.
- Cut butter into small pieces and add to the dry ingredients.
- Mix together dry ingredients and butter with your fingers, till it resembles like bread crumbs.
- Beat together egg and sugar; add coconut milk and mix well.
- Gradually add dry ingredients to the wet ingredient mix and combine well with a wooden spatula.
- Add coconut and cherries as combine well.
- Line the cup cake tray with cup cake liners and spoon the muffin mix (make sure that each tray is only half filled).
- Bake in the oven for about 20-25 mins: (till the tooth pick inserted in the middle of the muffin comes out clean).
- Take out from oven and allow to cool down for 10-15 mins:
- Enjoy the soft, delicious Cherry-Coconut Muffins.
