Chicken Momo (Steamed)

Ingredients
For Dough
  • All Purpose Flour - 1 cup
  • Oil - 1 tbsp
  • Luke Warm Water - as required
  • Salt - as required
For Filling
  1. Chicken - 250 gms: (boneless)
  2. Onion - 1 no: (finely chopped)
  3. Green Chilli - 1 no: (finely chopped)
  4. Spring Onion - 2tbsp (finely chopped) 
  5. Ginger-Garlic Paste - 2tsp
  6. Carrot - 1 no: (finely chopped, optional) 
  7. Beans - 3-4 nos: (finely chopped, optional) 
  8. Cabbage - 1/5 portion (finely chopped, optional) 
  9. Soya Sauce - 1 tsp
  10. Tomato Sauce - 1tsp
  11. Chilli Sauce - 1 tsp
  12. Pepper Powder - 1 tsp
  13. Salt - as required
Preparation Method
  1. Mix together the ingredients for dough and make a soft dough; cover the dough with a damp cloth and keep aside for 20-30 mins:.
  2. Cook the chicken with pinch of salt, 1 tsp ginger-garlic paste and 1 tsp pepper powder.
  3. Strain the excess water from the chicken and allow it to cool down.
  4. Mince the chicken with the help of food processor or in the small jar of the mixer; transfer the minced chicken to a large mixing bowl.
  5. Add onion, gren chilli, spring onion, 1 tsp ginger-garlic paste, carrot, beans, cabbage, soya sauce, tomato sauce and chilli sauce.
  6. Mix well and check for salt. Add salt, if required.
  7. Roll the dough into thin but big roti.
  8. Cut equal sized small rotis with the help of cookie cutter or any other sharp edged bowl.
  9. Take 1 tsp of filling and put on the centre of the roti; fold it in a semi-circle and flatter the edges with fork. Make sure that all the edges are closed properly.
  10. Heat up a steamer, oil the steamer rack well. (This is critical because it will prevent dumplings from sticking.)
  11. Arrange uncooked momos in the steamer with some space left between them. Close the lid, and allow steaming until the momos are cooked thoroughly, about 10-15 min.
  12. Take the Chicken Momos off the steamer, and immediately serve with Red Chilli Sauce.

Pachor / Rice Cooked in Jaggery Syrup

Pachor is rice cooked in jaggery syrup with coconut. Pachor will be served in churches in central travancore (especially in Kottayam) during feast.   Ingredients Cooked Rice - 2 cups Jaggery (grated) - 3/4 cup Coconut (grated) - 3/4 cup Salt - a pinch Nutmeg + Cardamom + Dry Ginger + Cumin - 1 tsp (powdered) Ghee - 2 tbsp  Sliced Coconut - 1/2 cup Preparation Method Fry sliced coconut in ghee and keep aside. Melt jaggery in one cup of water, strain and keep aside. To a pan add cooked rice, melted jaggery, coconut and salt; mix well and cook till the coconut and rice absorbs the jaggery syrup and become thick. Add the spice powder and fried coconut along with ghee; mix well and remove from flame and allow to cool. Enjoy the sweet and warm Pachor. Note: You can use any rice, I used the matta (brown) rice.

Chocolate and Vanilla - Caramel Cake

Chocolate and Vanilla - Caramel Cake is made by me as per the request of my daughter for her birthday. As I prepared it for birthday party, the cake was weighing around 2.5Kg. You can half the ingredients and make it as small cake. Caramel Syrup Ingredients Sugar - 1 cup Butter - 1 tbsp Hot Water - 1/4 cup Preparation Method Add sugar to a wide bottom thick pan and spread evenly. Keep the flame medium and cook till the sugar start to melt and the color changes to golden brown. Reduce flame to low, add butter and mix well. Slowly pour in the hot water, mix well and make sure that there is no sugar crystals; remove from flame and keep aside to cool down.
