Ingredients- Lotus Seed - 1 cup
- Onion - 1 large (finely chopped)
- Tomato Puree - 1/2 cup (use 2 tomatoes)
- Potato - 1 medium (cut into cubes)
- Ginger - Garlic Paste - 1 tsp
- Cashew Nuts - handfull
- Fresh Cream - 2tbsp
- Bay Leaf - 1
- Cloves - 3-4
- Cinnamon - 1 small stick
- Cardamom - 4-5
- Chilli Powder - 2 tsp
- Garam Masala Powder - 1 tsp
- Oil - 2 tbsp
- Salt - as required
- Corriander Leaves - as required
- Dry roast the lotus seed till it puffed up and keep aside.
- Soak the cashew nuts and grind to fine paste and keep aside.
- Heat oil in a thick bottom pan and splutter bay leaf, cloves, cardamom and cinnamon.
- Add onion, ginger-garlic paste and saute till onion become transperant.
- Add chilli powder and garam masala and saute for 1 min:
- Add potato and 1/4 cup water and cook, in low flame, till potatoes are done.
- Add salt, tomato puree, cahew paste and mix well and cook in low flame.
- When the gravy starts to bubble add puffed lotus seed, mix well and cook in low flame for 5-7mins: keeping the lid closed.
- Remove from flame, add fresh cream and mix well.
- Transfer the Lotus Seed Masala to a serving bowl and garnish with corriander leaves.
- Lotus Seed Masala is perfect side dish for chappathi, naan and phulka.
