Chicken Pizza

Ingredients
  • Pizza Base Dough - for 2 medium-sized Pizza 
  • Pizza Sauce - 4 tbsp
  • Grate Pizza Cheese - 100 gms:
  • Oregano - 2 tsp
  • Red Chilli Flakes - 2 tsp
  • Onion - 1 (sliced)
  • Tomato 1 (sliced)
  • Boneless Chicken Piece - 200 gms (cut into cubes)
  • Salt - as required
  • Red Chilli Powder - 1 tsp
Preparation Method
  • Marinate the chicken cubes with salt, red chili powder and keep aside for 10-15 mins:
  • Shallow fry the chicken pieces and keep aside.
  • Preheat the oven at 180 degrees for 10 mins:
  • Apply some oil on the baking tray and using your palm and fingers gently roll the dough to circle shape.
  • Tuck the sides of the dough, so that the edges become thick and pizza toppings will not fall out of the base.
  • Prick the dough with a fork.
  • Spread 2 tbsp of pizza sauce over the dough, avoiding the edges.
  • Spread grated cheese over the pizza sauce.
  • Evenly arrange sliced tomato, onion, and chicken cubes.
  • Sprinkle 1 tsp each of oregano and red chili flakes.
  • Spread grated cheese on top of the pizza.
  • Bake the pizza for 10-12 mins (till the cheese melt completely and edges become golden brown in color).
  • Enjoy the delicious home-made Chicken Pizza.

Pachor is rice cooked in jaggery syrup with coconut. Pachor will be served in churches in central travancore (especially in Kottayam) during feast.   Ingredients Cooked Rice - 2 cups Jaggery (grated) - 3/4 cup Coconut (grated) - 3/4 cup Salt - a pinch Nutmeg + Cardamom + Dry Ginger + Cumin - 1 tsp (powdered) Ghee - 2 tbsp  Sliced Coconut - 1/2 cup Preparation Method Fry sliced coconut in ghee and keep aside. Melt jaggery in one cup of water, strain and keep aside. To a pan add cooked rice, melted jaggery, coconut and salt; mix well and cook till the coconut and rice absorbs the jaggery syrup and become thick. Add the spice powder and fried coconut along with ghee; mix well and remove from flame and allow to cool. Enjoy the sweet and warm Pachor. Note: You can use any rice, I used the matta (brown) rice.

Bangalore, India to Dublin, Ireland amidst Covid-19

We, (myself, my husband, and our ten years old daughter), travelled from Bangalore to Dublin through Paris on 13th August 2020, as my husband got an employment offer from Ireland. We all were excited about the relocation but cautious. When our friends and relatives came to know that we travelled during the pandemic, many, who wanted to join their spouse or family abroad, but concerned about travelling with kids, started pinging us asking for the precautionary measures we took and the travel details. This is my humble attempt to write down the preparations for the travel and how we travelled.  Preparation       As soon as we came to know that we have to travel from Bangalore to Dublin any time in August, we started our planning.      We avoided going to any shops for purchase, in order to avoid the interaction with the public so that the risk can be reduced. Elayada

Ingredients Rice Flour - 3 cups Grated Coconut - 1 cup Grated Jaggery - 1/2 cup Cumin Powder - a pinch Cardamon Powder - a pinch Salt - a pinch Plantain Leaf Preparation Method Add rice flour and salt to a bowl and mix well. Make a thick dough, adding lukewarm water little by little. Mix together jaggery, coconut, cumin powder, cardamon powder and keep aside. Take lemon size of rice dough and spread it to a medium size piece of plantain leaf evenly with wet fingers. Take spoon full of coconut-jaggery mix and spread that on the top of the spread-ed rice dough. Fold the plantain leaf from middle to inside. Cook them in a steamer at medium flame. The Elayada is ready when the dough separates from the plantain leaf. Remove from flame, allow it to cool and taste the mouth-watering Kerala special Elayada.
