Butter Cream Bun

Butter Cream Bun is an easy to make fried bun recipe. In the childhood days, we used to indulge in the sweet-creamy butter cream bun as an evening snacks.
Ingredients
For Bun
  • All Purpose Flour (Maida) - 2 cups
  • Sugar - 2 tbsp
  • Butter - 2 tbsp
  • Milk -3/4 cup to 1 cup (as required)
  • Active Dry Yeast - 1 tsp
  • Salt - a pinch
  • Oil - as required for deep frying
For Butter Cream Filling
  • White Unsalted Butter - 100 grams
  • Icing Sugar - 2 cups
  • Vanilla Essence - 1 tsp
  • Milk- 1-2 tbsp
Preparation Method
  1. Take butter, sugar and 3/4 cup milk in a sauce pan and heat till milk is lukewarm.
  2. Add yeast and mix well. Set aside for 5-10 mins or till the yeast start to bubble.
  3. Add flour and salt and knead well till a smooth dough is formed. Add more milk, if required. 
  4. Cover dough with damp cloth and keep aside aside for 1-2 hours, till the dough become double in size.
  5. Punch down the air from the dough and kneed slightly.
  6. Take small lemon size portions from the dough and roll into a smooth ball and flatten it slightly.
  7. Arrange the ball in flour dusted plate leaving some space and keep aside for 15 to 20 mins, until rise in size.
  8. Heat oil for deep frying, drop the balls in hot oil. Fry the bun in medium flame till the bun become golden on both sides.  
  9. Remove from oil and keep in kitchen towel till the bun cool down completely.
  10. Take while unsalted butter in a bowl, add half of the sugar and vanilla. and whip well till creamy.
  11. Add remaining icing sugar and whip till combined. Add 1-2 tbsp milk and mix well.
  12. Take the cooled bun, slit it open (make sure not to cut fully) and fill with butter cream.
  13. The delicious  home-made Butter Cream Bun is ready to serve as snack.

Bangalore, India to Dublin, Ireland amidst Covid-19

We, (myself, my husband, and our ten years old daughter), travelled from Bangalore to Dublin through Paris on 13th August 2020, as my husband got an employment offer from Ireland. We all were excited about the relocation but cautious. When our friends and relatives came to know that we travelled during the pandemic, many, who wanted to join their spouse or family abroad, but concerned about travelling with kids, started pinging us asking for the precautionary measures we took and the travel details. This is my humble attempt to write down the preparations for the travel and how we travelled.  Preparation       As soon as we came to know that we have to travel from Bangalore to Dublin any time in August, we started our planning.      We avoided going to any shops for purchase, in order to avoid the interaction with the public so that the risk can be reduced. Sooji Gothambu (Broken Wheat) Upma

Ingredients Broken Wheat - 1 cup Onion- 1 (chopped) Green Chili - 2 (chopped) Ginger - 1 piece (chopped) Carrot - 1 (chopped) Oil - 3-4 tbsp Curry Leaves - as required Red Chili - 1-2 nos: Salt   - as required Grated Coconut - as required (optional) Preparation Method Boil water in a deep pan, add broken wheat and a pinch of salt and cook till broken wheat is  cooked and become soft. Transfer the wheat to a strainer and allow excess water to strain. In a pan bring oil to heat, add chopped onion, carrot, green chili, ginger, red chili and curry leaves and saute till the onion becomes golden brown. Add cooked wheat, mix well. Add salt if required, close the lid and cook for 5mins:. Remove from flame, garnish with grated coconut and serve healthy breakfast.
