Ghee Rice / Ney Choru

Ingredients Basmati Rice - 1 cup Ghee - 4 tbsp Cinnamon - 1 stick Cardamom - 3-4 nos: Cloves - 3-4 nos: Bay Leaf - 1 no: Cashew Nuts - 8-10 nos: Raisins - 8-10 nos: Onion (thinly sliced) - 1 small Onion (chopped) - 1 small Boiling Water - 1.5 cup Salt - as required Preparation Method Wash and soak the rice for 20 mins:. After 20 mins: transfer the rice to a strainer to remove the excess water. Heat oil in a cooking pan, fry cashew nuts and raisins and keep aside. Add thinly sliced onion to the ghee and saute onions until crisp and brown; drain and keep aside the onion. Add Cinnamon, Cardamom, Cloves, Bay Leaf to the ghee and saute for 2-3 mins: in low flame. Add chopped onion and saute till onion become translucent. Add rice and saute in low-medium flame till rice start to splutter. Add boiling water, salt and mix well. Irachi Pathiri / Erachi Pathiri

Irachi Pathiri / Erachi Pathiri is a north Kerala special snack served especially during the feast. It can be prepared with any kind of meat. Ingredients Wheat Flour - 1.5 cups Boneless Chicken -  250 gms: Onion - 2 (finely chopped) Ginger - 1 tbsp (finely chopped) Garlic  - 1 tbsp (finely chopped) Tomato - 1 (finely chopped) Curry Leaves - as required Garam Masala - 1 tsp Red Chilli Powder - 1 tsp Pepper Powder - 1/2 tsp Turmeric Powder - 1/2 tsp Oil - 3 tbsp Salt - as required Egg - 5 nos: Preparation Method Prepare a loose batter out of wheat flour by adding sufficient salt and water. Bread-Banana Pola

Bread-Banana Pola is easy to make kids friendly snack. It can be served as a snack or breakfast and can even pack as morning snacks for kids. Ingredients Bread - 12-15 slices Egg - 4 nos: Milk - 1/2 cup Sugar - 3 tbsp Cardamom Powder - 1/2 tsp Kerala Banana (Nendhran) - 2 nos: (ripe) Grated Coconut -1/4 cup Cashew - as required (finely chopped) Raisins - as required Ghee or Butter - as required Preparation Method Chop the banana and keep aside. In a pan heat 2-3 tbsp ghee and saute banana till it becomes golden brown in color. Add grated coconut, cashew, and raisins and saute for 2-3 mins: in low flame and keep aside. Kaipola or steamed Plantain cake is an easy to make authentic Malabar snacks. It can be made with few ingredients which is available at home. Kaipola is rich in flavor and highly nutritious and can be served as a complete meal for kids. Pazham Nirachathu (Banana with Sweet Coconut Filling)

Pazham Nirachathu (banana with sweet coconut filling) is a very popular snack in Malabar region. It is an easy to make snack and can be prepared with the ingredients that are always available in home. Ingredients Kerala Banana (Nendhran) - 3 nos: (perfectly ripe) Grated Coconut - 5-6 tbsp Sugar - 2 tbsp (according to your taste) Cardamom Powder - 1/4 tsp Raisins - 10-15 nos: Cashew - 10-15 nos: Ghee - 3 tbsp Maida - 3-4 tbsp Salt - a pinch Coconut Oil - 4-5tbsp (for shallow fry) Preparation Method Steam cook the bananas for 5-7 minutes and keep aside. In a pan, heat ghee and fry cashews and rasins and keep in kitchen towel. To that ghee, add grated coconut and saute for 4-5mins: in medium flame.
