Egg Fried Rice

Ingredients Basmati Rice - 2 cups Egg - 4 nos: Onion - 1 medium (thinly sliced) Carrot - 2 nos: (cut into thin slices) Beans - 10-12 nos: (cut into thin slices) Garlic - 1 tbsp (finely chopped) Pepper Powder - 2 tsp Soya Sauce - 2-3 tsp Butter - 3 tbsp Salt - as required Preparation Method Wash and clean the rice; soak the rice in cold water for 20 mins:. Drain the water and keep the rice in strainer for 10 mins: to remove excess water. Boil water in a large pan and add salt (the water should taste salty, then only the rice will taste good. Cook the rise till its 90% done, strain and keep aside. Crack open the eggs to a bowl, add 1tsp pepper powder and salt; mix well and scramble the eggs and keep aside. In a wok (or a thick bottom large vessel) heat butter and saute garlic. Add onion, carrot, beans; saute and cook for 5mins: in high flame. Potato Egg Skillet

Potato Egg Skillet is an easy to make and filling dish that can be served as healthy breakfast or brunch. Ingredients Baby Potato or Baby Rooster Potato - 500 gms: Bacon (optional) - 100 gms: (cut into cubes) Egg - 4 nos: Oil - 2 tbsp Italian Seasoning (optional) - 1 tsp Pepper Powder - as required Salt - as required Preparation Method Wash clean the potatoes (do not remove skin), pat dry and cut into cubes. Heat the skillet and add bacon, keep the flame in medium and cook till the bacon become golden brown in color and crisp. Remove from pan and keep in kitchen towel. If you are not using bacon, heat oil in the skillet and add potatoes. If you are using bacon, add potatoes to the oil drained out from the cooked bacon. Ingredients Puff Pastry Sheet - 1 roll Egg - 6 nos:  Onion - 4 medium (cut into thin slices) Tomato - 1 medium (cut into thin slices) Red Chilli Powder -2 tsp Garam Masala - 1tsp Chicken Masala (optional) - 1 tsp Turmeric Powder - 1/4 tsp Curry Leaves - as required Salt - as required Oil - 4 tbsp Preparation Method Boil 5 eggs fully, cut into halves and keep aside. In a pan heat oil and add onion, ginger, and garlic; sauté in low flame till onion becomes golden brown in color. Add tomatoes, curry leaves, and salt; sauté till tomato becomes mushy. Add turmeric powder, garam masala, chili powder, and chicken masala; sauté for 1-2 mins: in low flame. Kaipola / Kayapola

Kaipola or steamed Plantain cake is an easy to make authentic Malabar snacks. It can be made with few ingredients which is available at home. Kaipola is rich in flavor and highly nutritious and can be served as a complete meal for kids. Ingredients Kerala Banana (Nendran) - 2 nos: (ripe) Egg - 4 nos: Sugar - 4-5 tbsp Cardamom Powder - 1 tsp Cashew Nuts - as required Raisins - as required Ghee - as required Preparation Method Cut banana into small cubes and keep aside. In a thick bottom pan heat 4-5 ghee and saute the banana in low flame till banana become golden brown in color. Saute cashew nuts and raisins in ghee and keep aside. Egg Masala (Sunny Side Up)

Ingredients Egg - 3 nos: Onion - 3 nos: (finley chopped) Tomato - 1 no: (finely chopped) Ginger - Garlic Paste - 1 tsp Turmeric Powder - 1/4 tsp Garam Masala - 1 tsp Red Chilli Powder - 1 tsp Oil - 3-4 tbsp Mustard Seeds - 1/4 tsp Curry Leaves - as required Salt - as required Corriander Leaves - 1 tsp Preparation Method Heat oil in a flat, thick-bottom pan and splutter mustard seeds. Add onion and saute in medium flame till onion become translucent. Add curry leaves, salt and ginger-garlic paste; saute till onion turn slightly turn into brown. Egg Burji Paratha

Ingredients Egg - 4 nos: Onion - 2 medium (finely chopped) Ginger - 1 tsp (finely chopped) Tomato - 1 (finely chopped) Pepper Powder - 1 tsp Chilli Powder - 1 tsp Oil - 3 tbsp Salt - as requied Chappthi dough - as required Ghee - as required Preparation Method Crack the eggs to a bowl, add salt and pepper powder; beat well and keep aside. Heat oil in a thick bottom pan; add onion and ginger; saute for 5-7 mins: Add tomato, salt and saute till onion become slightly brown in color. Egg Biriyani

Ingredients Egg – 4 nos: (hard boil and remove shell) Basmati Rice – 2 cups Onion -3 (finely sliced ) Ginger – 1 (medium piece) Garlic cloves – 10 nos: Chilli Powder – 1 tsp Green Chilli – 1no: Coriander Leaves (chopped) - 2tsp Mint Leaves (chopped ) – 2tsp Cardamom – 4nos: Cloves - 4nos: Cinnamon – 4 (1"  piece) Star anise – 2nos: Ghee – 4 tsp Salt - as required Onion (thinly sliced), Cashew, Raisins - as required (optional) Preparation Method Soak basmati rice for half an hour in water . Drain out water and spread it on kitchen towel for drying. Make small slit in the eggs. Make a fine paste of 1/2 tsp chilli powder and pinch of salt and coat on the eggs. Heat 1tbsp ghee in a pan and roast the eggs till it turns golden brown; keep aside. Caramel Custard Pudding

Ingredients Milk - 500 ml Eggs - 3 nos: Sugar - 7-8 tbsp Vanilla Essence - 1/4 tsp Preparation Method In an aluminum pudding tin, add 1 tbsp sugar and keep in very low flame on a stove.  Wait till the sugar melts and change the color to a golden brown. Swirl it evenly to reach all parts of the tin. Take a large baking pan and pour water up to 1-inch height. Place the pudding tray in the pan with water. Preheat the oven at 180 degrees C. In a large bowl beat eggs by adding one at a time. Add sugar and beat till soft peaks are formed. Add milk and vanilla essence and give a quick stir. Strain this through a strainer to remove undissolved egg white strands. Transfer the pudding mix to the pudding tin. Bake the pudding for about 45-50 minutes or until done. Transfer the tin to a wire rack and allow it to cool completely. Keep the pudding in the refrigerator for 3-4 hours. Run a sharp knife around the sides of the tray and invert to a plate. Choco Chip Vanilla Cake

Ingredients All purpose flour(Maida) - 1 1/2 cups Baking powder - 1/2 tsp Eggs - 2 nos Sugar - 3/4 cup Unsalted butter (in room temperature) - 100gm Salt - a pinch Vanilla essence - 1/4 tsp Choco Chips - 100 gms: Preparation Method Preheat oven to 350 degree F (180 degree Celsius). Grease the baking tray with butter. Sieve together maida, baking powder and salt and keep aside. Beat the eggs using a hand held electric mixer in a large bowl. Add sugar and butter and mix at the lowest speed again for a 2-3 mins (till the sugar and butter dissolves). Add maida mix little by little to the egg-sugar-butter mix and blend at a medium speed for 4-5 mins. Add vanilla essence,  blend for 1 more min. Gently fold in the choco-chips using a wooden spatula. Pour the batter to the tray. Bake in oven for 40-45 mins at 350 degree F(180 degree Celsius). (Prick the center of the cake with a sharp knife and it should come out clean, if done.) Mutta Thoran / Egg sauted with Coconut

Mutta thoran (egg sauted with coconut) is an easy to make and tasty side dish for rice. Ingredients Egg - 5 nos: Onion - 2 nos: (finely chopped) Ginger - 1 tsp (finely chopped) Green Chilli - 2-3 nos: (finely chopped) Coconut (grated) - 1 cup Oil - 3 tbsp Mustard Seeds - 1/4 tsp Curry Leaves - as required Salt - as required Preparation Method Beat the eggs with grated coconut and keep aside. In a wok bring oil to heat and splutter mustard seeds. Add onion, ginger, green chilli and saute till onion become translucent. Add curry and saute for 2 mins: Add egg-coconut mix, wait for 2-3mins: and stir well. Cook in slow flame, stirring continuously and scramble the egg. Saute till egg become slight golden brown flame; remove from flame. The hot Mutta Thoran / Egg sauted with Coconut is ready to serve with rice.

Egg Bhaji

Ingredients Egg - 3 nos: (hard boiled) Besan Flour - 1 ladle  Rice Flour - 1/2 ladle Chilli Powder - 1 tsp Chicken Masala -- 1/2 tsp (optional) Turmeric Powder - 1/4 tsp Salt - as required Oil - as required for deep fry Preparation Method Cut the hard boiled eggs into 4 pieces and keep aside. In a bowl mix together besan flour, rice flour, chilli powder, chicken masala, turmeric powder and salt. Add water spoon by spoon and make a thick batter. (Make sure that you are adding very less water at a time; the batter should be thick) In a wok bring oil to heat. Take each pieces of egg and carefully cover with the batter and put in boiling oil. Deep fry the egg pieces till it turns brown in color. Remove from flame and place over kitchen towel to remove excess oil. Enjoy the hot Egg Bhaji with tomato sauce.

Baked Boost Pudding

Dear All... Today I am coming with my 150th post in this blog... Thank you all for your support and feedback.... Enjoy cooking.........:) I got this recipe from the cooking group on FB... I made some modifications to the original recipe and baked this delicious Boost Pudding... Ingredients Milk - 3 cups Eggs - 3 nos: Boost - 3 tsp Sugar - 7 tbsp Vanilla Essence - 1/4 tsp Preparation Method In an aluminum cake tin/pudding tin, add 1 tbsp sugar and keep in very low flame on a stove.  Wait till the sugar melts and change the color to a golden brown. Swirl it evenly to reach all parts of the tin. Keep aside. Let it cool and crystallize. Preheat the oven at 180 degrees C. In a mixer jar add 2 tbsp sugar, 1 tsp boost, 1 egg, 1 cup milk and blend well. Pour this to the caramelized tin. Repeat step 3 until 3 eggs are done.  Add vanilla essence to the last set of the mix. Egg Roast (Mutta Roast)

Ingredients Eggs- 3 nos: (hard boiled) Onion - 3 nos: (finely sliced) Ginger -1 tsp (chopped) Garlic - 1 tsp  (chopped) Curry leaves - as required Water-1/4 cup to 1/2 cup Oil - 5 tbsp Salt - as required Kashmiri Chili Powder- 1 tsp  Coriander Powder - 2 tsp Turmeric Powder - 1/2 tsp Garam Masala - 1/2 tsp Preparation Method Combine the masala powders with water to form a smooth paste and keep aside. Heat oil in a pan, add onion, ginger, garlic and curry leaves.  Saute over medium flame till onion turns golden brown. Reduce the flame to low and add salt, the masala paste, saute till the raw smell of masala goes off (4 to 5 mins). Add water, mix well and bring to boil. Add the sliced eggs, cover the eggs with the gravy, cover and cook for 2 to 3 minutes. Serve  the hot Egg Roast with Idiyappam or Appam .

Egg Biscuit

What about making the Egg Biscuits, which is available in bakery at home??? A good idea, right??? Ingredients Egg - 1 no: (at room temp) Sugar - 1/4 cup All Purpose Flour/Maida - 3 tbsp Baking Powder - a pinch Vanilla Essence - 1/2 tsp Preparation Method Preheat the oven to 180 degree C. Line a baking sheet with parchment paper and apply a small coating of Oil or Butter.  Sift together flour and baking powder and keep aside. Beat egg, sugar and vanilla essence till it is pale in color and doubles in volume.  Add the flour mixture and mix gently with a wooden spoon. (Don’t use a mixer). Transfer this mixture into a zip pouch and make a small cut on one corner of the pouch. Drip the batter onto the baking sheet by applying small pressure to make small drops leaving space in between the drops. Bake for 12 to 15 mins: or till it starts to brown lightly around the edges. Carrot-Dates Cake

Carrot-Dates Cake is the super moist cake that can be made very easily. Carrot and Dates are really good for health. But most of us, especially kids, are so hesitant to have it. But if you bake a cake out of them, then everyone will love it.  To make the cake  more healthier whole wheat flour can be used instead of plain  flour.... Coffee Cup Cake!!! When I saw this recipe in Dr.Lekshmi Nair's cookery page in fortnightly Malayalam magazine Vanitha, I really wanted to give it a try... Luckily all the ingredients were available in my kitchen, so I baked this delicious Coffee Cup Cakes without any delay.... :) All of us enjoyed the coffee flavour in the cake.... Bread Pudding / Steamed Bread Pudding

Then try this delicate, soft, mouthwatering Bread Pudding, which can be easily made with the ingredients that are always available in your home..... You will love it........... :) Ingredients Bread - 8-10 slices Egg - 1 no: Milk - 3/4 cup Sugar - 4-5 tbsp  Cardamon Powder - a pinch Rice Flour - 1 tbsp (optional) Roasted Cashew & Raisins - as required Preparation Method Slice the crusts (brown sides) of the bread pieces and shred them using hand.
