Potato Wedges

Ingredients Potato - 3 (large size) Olive Oil - 2 tbsp Garlic (crushed) - 1 tsp Rosemary - 1 tsp Chilli Powder - 1 tsp Salt - as required Grated Cheese - 2 tbsp (optional) Preparation Method Wash and clean potatoes and pat dry. Cut each potato into 8-10 wedges and place in warm water for 10 mins: Remove the potatoes from warm water, place in a kitchen towel, and pat dry. In a large mixing bowl, mix together olive oil, garlic, rosemary, salt, and chilli powder. Add the potato wedges to the mix, combine well, and keep aside for 10-15 mins: Pre-heat the oven at 200 degrees C for 10 mins: Line a baking tray with butter paper and arrange the wedges in the tray. Bake the wedges for about 50-55 mins, flipping half-way. Remove the wedges from the oven when it starts to turn to golden in color. Ingredients Dates - 15-20 (de-seeded) Walnut - 15-20 All-purpose flour (Maida) - 1 1/2 cups Baking powder - 1/2 tsp Baking Soda - a pinch Eggs - 2 nos Sugar - 3/4 cup Unsalted butter (in room temperature) - 100gm Salt - a pinch Vanilla essence - 1/4 tsp Preparation Method Preheat oven to 350 degrees F (180 degrees Celsius). Bread-Banana Pola

Bread-Banana Pola is easy to make kids friendly snack. It can be served as a snack or breakfast and can even pack as morning snacks for kids. Ingredients Bread - 12-15 slices Egg - 4 nos: Milk - 1/2 cup Sugar - 3 tbsp Cardamom Powder - 1/2 tsp Kerala Banana (Nendhran) - 2 nos: (ripe) Grated Coconut -1/4 cup Cashew - as required (finely chopped) Raisins - as required Ghee or Butter - as required Preparation Method Chop the banana and keep aside. In a pan heat 2-3 tbsp ghee and saute banana till it becomes golden brown in color. Add grated coconut, cashew, and raisins and saute for 2-3 mins: in low flame and keep aside. Chicken Tortilla Wrap

Chicken Tortilla Wrap is as easy to make snack and can be send to kids in their lunch box. It is a complete meal and can be carried as a handy snack or meal while travelling. Grilled Chicken

Ingredients Chicken - 1 kg (cut into 8-10 pieces) Ginger-Garlic Paste -  2 tsp Pepper Powder - 2 tsp Turmeric Powder - 1/2 tsp Lemon Juice - 2-3 tbsp Salt - as required Red Chilli Powder -  2 tsp Corn Flour - 3 tsp Curd - 2-3 tbsp Oil - 2 tbsp Preparation Method Wash clean the chicken and pat dry with kitchen tissue. Make slit on the chicken pieces and keep aside. Marinate the chicken with Ginger-Garlic Paste, Pepper Powder, Turmeric Powder, Salt and Lemon Juice and refrigerate for 1 hour. In a bowl mix together red chilli powder, corn flour and curd and make a thick paste. Marinate the chicken in the mix and refrigerate 3-4 hours. (Refrigerate overnight for more juicy chicken). Karimeen Fry / Pearl Spot Fish Fry

Karimeen which is also known as Pearl spot fish and it is 'state fish of Kerala' and is considered a delicacy. Ingredients Karimeen / Pearl Spot Fish - 1/2 Kg (2-3 medium sized) Ginger - 2-3 tbsp Garlic - 2 bulb (cleaned) Black Pepper - 2 tbsp Shallots - 3-4 (cleaned) Red Chilli Powder - 2 tbsp Turmeric Powder - 1/2 tsp Salt - as required Curry Leaves - as required Coconut Oil - as required Preparation Method Clean the fish, remove the scales and wash with diluted vinegar, make slits in the flesh and keep aside to remove excess water. To the chutney jar of the mixer add ginger, garlic, shallots, red chilli powder, turmeric powder, hand full of curry leaves, salt and grind to a smooth paste by adding water 1-2 tbsp water.  Transfer the chilli paste to the mixing bowl, add 2tbsp coconut oil and combine well. Butter Cream Bun

Butter Cream Bun is an easy to make fried bun recipe. In the childhood days, we used to indulge in the sweet-creamy butter cream bun as an evening snacks. Ingredients For Bun All Purpose Flour (Maida) - 2 cups Sugar - 2 tbsp Butter - 2 tbsp Milk -3/4 cup to 1 cup (as required) Active Dry Yeast - 1 tsp Salt - a pinch Oil - as required for deep frying For Butter Cream Filling White Unsalted Butter - 100 grams Icing Sugar - 2 cups Vanilla Essence - 1 tsp Milk- 1-2 tbsp Preparation Method Take butter, sugar and 3/4 cup milk in a sauce pan and heat till milk is lukewarm.
