Breakfast Crunch

Breakfast crunch is a no cooking-no baking healthy, delicious and complete breakfast that can prepare even by small kids. I bet kids love making and having this. Ingredients (for single serving) Yogurt - 100 gm Cut Fruits (Apple, Banana, Strawberry, Pomegranate, Kiwi etc:) - 1/2 cup Corn Flakes  -1/2 cup Cashew, Cherry and Raisins - 3-4 each Preparation Method In a tall glass add half of the yogurt. Add cut fruits on the top of the yogurt. Add the remaining yogurt. Add corn flakes. Garnish the top of the corn flakes with cashew, raisins and cherry. The Breakfast Crunch is ready to serve in no time.

Vazhakoombu Thoran/ Banana Flower sauted with Coconut

Vazhakoombu (Banana flower) is a rich source of fiber and is healthy for all age group. Ingredients Banana Flower - 1 no: Grated Coconut - 1 cup Garlic - 4-5 petals Cumin - 1/2 tsp Turmeric Powder - 1/2 tsp Green Chilli - 2-3 nos: Red Chilli - 2 nos: Curry Leaves - as required Salt - as required Coconut Oil - 4-5 tbsp Mustard Seed  -1/2 tsp Urud Daal - 1 tsp Green Moong - 1/2 cup cooked (optional) Preparation Method Peal the 5-6 outer cover of the banana flower and finely chop. While chopping the flower remove the white thin stem in the middle of the banana flower. Sprinkle 1-2 tbsp of coconut oil on the chopped banana flower; mix well with hands and keep aside. In a mixer jar, crush together coconut, cumin, turmeric powder, garlic and green chilli and keep aside. In a wok bring oil to heat, splutter mustard seed, red chilli, curry leaves and urud daal. Egg Bhaji

Ingredients Egg - 3 nos: (hard boiled) Besan Flour - 1 ladle  Rice Flour - 1/2 ladle Chilli Powder - 1 tsp Chicken Masala -- 1/2 tsp (optional) Turmeric Powder - 1/4 tsp Salt - as required Oil - as required for deep fry Preparation Method Cut the hard boiled eggs into 4 pieces and keep aside. In a bowl mix together besan flour, rice flour, chilli powder, chicken masala, turmeric powder and salt. Add water spoon by spoon and make a thick batter. (Make sure that you are adding very less water at a time; the batter should be thick) In a wok bring oil to heat. Take each pieces of egg and carefully cover with the batter and put in boiling oil. Deep fry the egg pieces till it turns brown in color. Remove from flame and place over kitchen towel to remove excess oil. Enjoy the hot Egg Bhaji with tomato sauce. 

Chemmen Ada / Prawns Ada

Ingredients Rice Flour - 2 cups Prawns - 1/2 Kg Chilli Powder - 1 tbsp Ginger - 1 tsp (finely chopped) Garlic - - 1 tsp (finely chopped) Grated Coconut - 1 cup Oil - 3 tbsp Mustard Seeds- 1/2 tsp Salt - as required Curry Leaves - as required (chopped) Banana Leaves - as required (cut into palm size pieces) Preparation Method Boil 3 cups of water with enough salt; add rice flour, mix well and switch off the flame and keep aside to cool down. In a wok bring oil to heat, splutter mustard seeds. Add ginger, garlic, curry leaves and saute. Add onion and saute till onion become slight brown in color. Add chilli powder and saute for 2mins: in low flame. Add prawns (if prawns is big in size, chop them), add 1/4 cup water, mix well and cook till prawns are done (about 5 mins:). Bread-Dry Fruits Pudding

Ingredients Bread - 7-8 slices Butter - 2 tsp Egg - 2 nos: Milk - 1 cup Milkmaid - 200 ml Dry Fruits (Cashew, Raisins, Almond, Pista) - 1 cup (chopped) Vanilla Essence - 1/2 tsp Preparation Method Remove the sides of bread and cut into cubes or triangles. Apply butter on both the sides of bread pieces and toast for 30 sec: To a blender add egg, milk, condensed milk and vanilla essence and blend well. (if you want more sweet, add 1/4 cup sugar also). Preheat the oven to 230 degree C. Apply butter on the baking tray.  Then place one layer of bread pieces in the baking tray. On the top of the bread spread some dry fruits mix. Place rest of the bread pieces on the top of the dry fruit mix and then spread the remaining dry fruits on the top. Gently pour the egg-milk mix on the top of the bread. Unniyappam

Ingredients Rice (Sona Masoori or Basmati) - 2 cups Plantain- 4 nos: (cut into small pieces) Jaggery - 1 block Cardamom Powder - 1/2 tsp Coconut (finely chopped) - 1/2 cup Ghee or Coconut Oil - as required Preparation Method Wash and soak rice for about 2-3 hrs: Melt jaggery in 1/2 cup water and keep aside. Roast the coconut in ghee and keep aside. Strain the soaked rice, remove excess water, and keep aside for about 10 mins: Add rice, plantain, and jaggery syrup to a mixer jar and grind well. The consistency of the batter should be as that of idly batter. (If you want to make more sweet add more jaggery syrup. If the batter is so thick, add coconut milk or coconut water or water to make it loose).  Keep the batter aside for about 4-5 hrs: Add roasted coconut and cardamom powder and mix well. Meen Kizhi / Fish Kizhi

Meen Kizhi / Fish Kizhi is a Malabar special spicy dish. This is a dry side dish and we steam cook the fish in plantain leaf along with other ingredients.  We got a chance to try this dish in a food fest, but didn't get the recipe from there.. :( After an elaborated search, I got a recipe of Meen Kizhi, but that doesn't contain coconut. The one we had was having coconut, small onion and all... So I modified the recipe in my own way to get the same taste of that we had.... Luckily, that was a great success.... Cherry-Coconut Muffins

Cherry-Coconut Muffins is best suite for kids as a snack. The main attraction while baking the muffin is the pleasant and tempting aroma of coconut. The whole house will be filled with amazing aroma of coconut..... Try out and Enjoy!!!!!!!!! Ingredients Maida (all-purpose Flour) -2  cups  Baking Powder - 1/2 tsp Baking Soda - 1/2 tsp Salt - a pinch Butter (in room temp) - 100 gms:  Cherry - 100 gms (pitted and chopped) Grated Coconut - 1 cup Coconut Milk - 1.5 cup  Egg - 2 nos: Sugar - 1/2 cup Preparation Method Sieve together maida, baking powder, baking soda and salt and keep aside. Preheat the oven at 230 degree C. Roast the coconut in low flame for about 5 mins: (make sure that the white color should remain, only the water has to get evaporate). Or else you can use store bought desiccated coconut. Cut butter into small pieces and add to the dry ingredients. Mix together dry ingredients and butter with your fingers, till it resembles like bread crumbs. B

Netholi Peerapattichathu / Stir Fried Anchovies in Coconut

Ingredients Netholi / Kozhuva ( Anchovies ) - 1/2 kg (cleaned) Kudampuli ( Malabar Tamarind/ Fish Tamarind ) - 2 pieces Pear Onion / Shallot - handful (cleaned and chopped) Onion - 1 nos: ( chopped) Coconut - 1/2 (grated) Green Chili - 4-5 nos: (cut into 2-3 pieces) Ginger - 1 medium piece (finely chopped) Curry Leaves - 2-3 stems Water - 1/4 cup Coconut Oil - 2 tbsp Salt - as required Preparation Method In a clay cooking pot mix fish, kudampuli, onions, coconut, green chili, ginger, curry leaves, water and salt with hands and keep aside for 5-10 mins:. Cook in high flame till the water starts to boil. Once water starts to boil, lower the flame and close the pot with a lid (preferably clay lid). Cook for 8-10 mins, stirring once of twice. Once the fish is cooked, keep the lid open and cook for 2-3 mins: to evaporate the excess water. Mango-Walnut Bread

Ingredients All Purpose Flour (Maida) - 2 cup Mango Puree - 1 cup Walnut (chopped) - 1 cup Sugar - 1 cup (powdered) Egg - 3 nos: Baking powder - 1 tsp Baking soda - 1 tsp Cinnamon powder - 1/2 tsp (optional) Vanilla essence - 1/2 tsp (optional) Refined Oil- 100 ml. Preparation Method Dust the chopped walnut with 1 tbsp maida and keep aside. Preheat the oven at 350 degree F. In a bowl mix together 2 cups of flour, sugar,  baking powder, baking soda and cinnamon powder.  Beat  together the eggs, vanilla essence and oil in a large bowl.  Add dry ingredients slowly to the egg mixture and mix well. Add the mango puree and walnut and incorporate well with a wooden spatula. Grease loaf pan and pour the mixture.   Bake for 55-60 mins:, until a toothpick inserted into the center comes out clean.  Take the bread from oven and allow it cool in the pan for 10-15 mins:. Lemon Rice

Ingredients White Rice - 1 cup Turmeric Powder - 1 tsp Lemon Juice - 3-4 tbsp Salt - as required Ghee  or Oil - 2 tbsp Chana Daal - 1 tbsp Curry Leaves - 1 stem Red Chilli - 2 nos: Fenugreek  - a pinch Preparation Method Add turmeric powder, salt and 1/2 tsp ghee to the rice and cook in 2 glasses of water and keep aside. (make sure that the rice is not sticky) In a wok bring ghee or oil to heat and saute chana daal, red chilli and curry leaves. Add fenugreek, rice and lime juice and mix well. (adjust lime juice according to your taste).. The hot and tangy Lemon Rice is ready to serve with raitha.

Chakkakuru Mezhukkupuratti / Stir Fried Jack Fruit Seed

Ingredients Jack Fruit Seed - 20-25 nos:  Red Chilli Powder - 1/2 tsp Pepper Powder - 1/2 tsp Turmeric Powder  - 1/4 tsp Garlic - 10-12 petals (crushed) Black Pepper - 1/2 tbsp (crushed) Coconut Pieces - handful Salt - as required Oil - 2 tbsp Mustard seeds - 1/4 tsp Preparation Method Remove the outer skin of jack fruit seeds, cut into thin pieces, wash and keep aside. To the cleaned jack fruit seeds add chilli powder, pepper powder, turmeric powder, salt and 1/4 cup waster and cook well. Once the  jack fruit seeds are cooked, evaporate the excess water by keeping the lid open in high flame. In a wok bring oil to heat and sputter mustard seeds. Add garlic, curry leaves and coconut, saute till the coconut and garlic starts to change the color. Add in the crushed pepper, cooked jack fruit seeds and saute in low flame for 8-10 mins: The hot and spicy Chakkakuru Mezhukkupuratti (Stir Fried Jack Fruit Seed) is ready to serve with rice or kanji.

Black Forest Cake

Ingredients For Cake All Purpose Flour (Maida) - 3/4 cup Coco Powder - 3/4 cup Baking powder - 1/2 tsp Eggs - 4 nos Sugar - 1 cup (powdered) Unsalted butter (in room temperature) - 100 gm Salt - A pinch Vanilla essence - 1/4 tsp Milk - 1/4 to 1/2 cup For Assembling and Decoration Whipping Cream - 200 gms: Canned Cherry - 1 tin Sugar - 1/2 cup Grated / Shaved Chocolate - 100 gms:  Preparation Method Separate the egg white and yolk and keep aside. Sieve together the dry ingredients - maida, coco powder, baking powder and salt and keep aside. Beat the egg whites with 1/4 cup sugar till thick peaks form and keep aside. In a large bowl beat the egg yolks. Add sugar and butter and mix at the lowest speed again for a 2-3 mins (till the sugar and butter dissolves). Papaya Cutlet

Raw Papaya Cutlet..... An easy to make and healthy snack.... Enjoy... Ingredients Grated Raw Papaya - 2 cups Onion - 3  nos: (finely chopped) Green Chili - 3-4  nos: (finely chopped) Ginger - 1 piece (finely chopped) Curry Leaves - as required (finely chopped) Potato - 2 nos: (cooked, peeled and mashed) Salt - as required Garam Masala - 1 tsp Egg - 1-2 nos: Bread Crumbs - as required Oil - as required for deep frying Preparation Method In a wok bring 4 tbsp of oil to heat. Add chopped onion, ginger, chili and saute till onion become transparent. Add grated papaya and saute till papaya gets cooked and water evaporated from papaya (around 5 mins:). Add curry leaves, salt, garam masala and saute for 2 mins:. Remove from flame and allow the papaya mix to cool. Add mashed potatoes and combine well with your hand. Vegetable Biriyani

Ingredients Basmati Rice - 3 cups Whole Spices (Cardamon, Cloves, Cinnamon)  - 4-5 nos: each Diced Vegetables (Carrot, Beans, Potato, Green peas) - 2 cups Onion - 3 nos: (finely chopped) Ginger - Garlic Paste - 1 tbsp Thick Curd - 1/2 cup Cashew Paste - 2-3 tbsp (optional) Red Chili Powder - 1 tsp Mint (Pudina) Leaves - handful Coriander Leaves - 2 tbsp Green Chili - 2-3 nos: Ghee - 4-5 tbsp Salt - as required Rose Water - 2-3 drops (optional) For Garnishing Ghee - 2 tbsp Onion - 1 no:( finely sliced) Cashew and Raisins - as required Preparation Method Wash and soak the rice in water for about 30 mins:. Transfer the rice to a strainer and keep aside for about 30 mins: to drain the excess water. Steam cook the diced vegetables till they are done. Creamy Tomato Pasta

Ingredients Pasta - 250 gm: Tomato - 5 nos: (pureed) Garlic - 1 pod (cleaned & sliced) Onion - 1 small (finely chopped) Cheese - 100 gm: (grated) Fresh Cream - 5 tbsp Pepper Powder - 2 tsp Dried Oregano - 1 tbsp Olive Oil - 4-5 tbsp Salt - as required Preparation Method Cook pasta as per the packet instruction and keep aside to drain excess water. In a wok bring oil to heat and saute garlic. When the garlic starts to change color add onion and saute till onion become translucent. In low flame add tomato puree and saute till oil separates. Add in cooked pasta and mix well so that the pasta get covered in tomato puree. Add in pepper powder, oregano and salt, mix well and cook for 4-5 mins: in low flame. Add fresh cream and mix well. Butter Chicken

Ingredients Chicken - 500 gms: (cut into small pieces) Curd - 2 tbsp Red Chilli Powder - 2 tbsp Ginger-Garlic Paste - 2 tsp Onion - 4 nos: (chopped) Tomato - 2 nos: (pureed) Whole Spices (Cardamon, Cinnamon, Cloves) - 2-3 nos: each Cashew Paste - 2 tbsp Fresh Cream - 2 tbsp Butter - 50 gms: Oil - 2 tbsp Salt - as required Kasoori Methi - 1 tbsp  Preparation Method Marinate the chicken with curd, ginger-garlic paste, 1 tbsp red chilli powder, salt and refrigerate for 1 hour. Pre-heat the oven to 200 degree C for 10 mins:. Grill the marinated chicken pieces at 200 degree C for 30 mins: flipping in between. In a wok, heat oil, splutter whole spices, add onion and saute till onion become slightly brown in color, remove from flame and allow  it to cool down. Milk Halwa

This simple recipe is posted by 'Divya Ajith' in the famous FB group " Ammachiyude Adukkala ". I just followed the recipe blindly and it was a great success... Ingredients Milk-2 cups Rava-1/4 cup Sugar-3/4 cup Ghee-1/2 cup Preparation Method Put all the ingredients in a thick bottomed vessel and keep it on medium flame. Stir continuously till it become thick and leaves the sides of the vessel. (it will take 15-20mins:) Transfer the halwa to a greased bowl and allow to cool down. Once it is cut into desired shape. Enjoy the easy to make, yuuuuummmmyyyy Milk Halwa. Note:- No need to add any flavoring agent. It tastes like milk khoya. However if you desire, you can garnish with dry fruits or cherry.

Paneer Butter Masala

Ingredients Paneer (Cottage Cheese) - 200 gms: (cut into cubes) Onion - 3 nos: (chopped) Tomato - 2 nos: (pureed) Whole Spices (Cardamon, Cinnamon, Cloves) - 2-3 nos: each Cashew Paste - 2 tbsp Fresh Cream - 2 tbsp Butter - 50 gms: Chilli Powder - 2 tsp Salt - as required Preparation Method In a wok, heat 25 gms: of butter and saute paneer cubes for 2 mins: Remove paneer from wok and splutter whole spices in that wok. Add onion and saute till onion become slightly brown in color, remove from flame and allow  it to cool down. Once onion is cool down, make paste of the onion. In a wok bring remaining butter to heat and add the onion paste and saute till onion paste become brown in color. Add in tomato puree and saute till butter separates. Add chilli powder and saute for 2 mins: Add paneer cubes, salt and mix well. Add 1/2 cup water and cook for 5 mins: Reduce the flame and add cashew paste and mix well. Switch of the flame when the gravy starts to bubble.

Podi Idly

Podi Idly can be served as a breakfast or snack; or you can enjoy at any time. Podi Idly can be prepared with small idlies or with the normal idlies cut into cubes. Ingredients Small Idly - 25-30 nos: Carrot - 1 no: (grated) Chutney Powder - 1 tbsp Ghee - 2 tbsp Cashew Nut or Peanut (split)- 3 tbsp Curry Leaves - 1 stem Salt - as required Preparation Method In a wok heat ghee and roast cashew nut or peanut in low flame. Add carrot and curry leaves and saute for 2 mins: Add chutney powder and saute for 1 min: Add idlies ad salt, mix well so that the idlies get covered with carrot and chutney powder and remove from flame. Podi Idly is ready to serve with chutney.

Bread Pizza

A pizza without kneading, waiting.... That's Bread Pizza... Bread Pizza is an easy to make snacks that will make your kids happy. Ingredients Bread - 4 slices Tomato - 1 small (finely chopped) Onion - 1 small (finely chopped) Carrot - 1 small (finely chopped) Capsicum - 1 small (finely chopped) Cheese (Pizza Cheese or Mozzarella Cheese) - 100 gms: (grated)  Pizza Sauce or Tomato Sauce - 2 tbsp Preparation Method Preheat the oven in 180 degree C. Place the bread slices in a oven proof tray. Spread 1/2 tbsp of sauce on the top of each bread slice. Spread tomato, onion, carrot and capsicum on the top of the tomato sauce. Put grated cheese on the top of the vegetables. Bake the bread in oven for about 10 mins:. Remove from oven once the cheese melted and bread slice become crisp. Enjoy the hot Bread Pizza with sauce.
