Idichakka Thoran / Pottuchakka Thoran

        Different dishes with raw jack fruit is very popular in Kerala at the beginning of jack fruit season. When unripe (green), it is remarkably similar in texture to chicken, making jack fruit an excellent vegetarian substitute for meat. It's a good idea to oil your knife and hands first before cutting, as the fruit is very sticky.


Ingredients
  • Pottu Chakka (Unripe Jack fruit) - 1 nos:
  • Grated Coconut - 2 cups
  • Turmeric Powder - 1/2 tsp
  • Cumin - 1 tsp
  • Garlic - 10 petals
  • Green Chili - 3-4 nos:
  • Coconut Oil - 3 tbsp
  • Red Chili - 2-3 nos:
  • Urud Daal - 1 tbsp
  • Mustard - 1/2 tsp
  • Curry Leaves - as required
  • Salt - as required
Preparation Method
  1. Remove the outer green part of the jack fruit and cut into medium pieces.
  2. Wash clean and remove excess water.
  3. Add salt and a pinch of turmeric powder to the jack fruit, sprinkle same water and cook for 8-10mins: in low flame. (Or you can steam for 10mins:).
  4. Let that to cool down.
  5. Take small portions of jack fruit pieces and crush them (3-4 whips will be sufficient) and keep aside.
  6. Crush together grated coconut, green chili, turmeric powder, cumin and keep aside.
  7. In a wok bring oil to heat, splutter mustard seeds, add urud daal, red chili and fry in low flame.
  8. When the urud daal become slightly brown add curry leaves and mix well.
  9. Add crushed jack fruit and mix well.
  10. Add crushed coconut to the center of the jack fruit and cover from all the sides.
  11. Keep the lid closed and cook for 5mins: in low flame.
  12. Mix well, add salt if required and remove from flame.
  13. The delicious, healthy Idichakka Thoran tastes so good with steamed rice / rice soup.

Add the spice powder and fried coconut along with ghee; mix well and remove from flame and allow to cool. Enjoy the sweet and warm Pachor. Note: You can use any rice, I used the matta (brown) rice.

Bangalore, India to Dublin, Ireland amidst Covid-19

We, (myself, my husband, and our ten years old daughter), travelled from Bangalore to Dublin through Paris on 13th August 2020, as my husband got an employment offer from Ireland. Achappam / Rose Cookies with Raw Rice

Achappam / Rose Cookies is a traditional Kerala deep fried snacks prepared using dedicated mold. It can be prepared by grinding soaked raw rice or with unroasted rice flour. This time I prepared Achappam / Rose Cookies using raw rice. Ingredients Raw Rice (White Rice) - 1 cup Egg - 1 no: Thick Coconut Milk - 3/4 cup Sugar - 4-5 tbsp Salt -  a pinch Sesame Seed - 2 tbsp Oil - as required for deep frying Preparation Method Wash clean and soak the raw rice for 2-3 hours. Drain the water and keep the rice in strainer for 20-30mins: to remove excess water. To the wet grinding jar of add rice, egg and grind by gradually adding the coconut milk. Add coconut milk as required. The batter should be smooth and without any grains and the consistency should be as that of dosa batter.  Transfer the batter to a large bowl and add sugar (you can add sugar as per the desired sweetness).
