Nurukku Gothambu Payasam

For preparing Nurukku Gothambu Payasam you need so much of patience, because it takes minimum one hour to get cooked. But I am sure that your efforts will get paid by the taste.
Ingredients
  • Broken Wheat - 1 cup
  • Jaggery - 250 gms:
  • Coconut - 1 (grated)
  • Cardamon Powder - 1 tsp
  • Dried Ginger Powder - 1 tsp
  • Ghee - 2 tbsp
  • Cashew - as required
  • Kismis - as required
Preparation Method
  1. Cut jagerry into small pieces, add some water, boil and melt, remove sediments using strainer and keep aside.
  2. Extract 1 cup of first milk, 1 and 1/2 cup of second milk and 2 cups of third milk from grated coconut and keep aside in separate bowls.
  3. Wash clean broken wheat and put that into a large cooking vessel (preferably Uruli).
  4. Add third set of coconut milk and cook broken wheat, stirring in between.
  5. When the wheat got half cooked add jaggery syrup and cook.
  6. When it start thickens add 2nd coconut milk and cook in low flame.
  7. When the wheat got cooked and the payasam thickens add 1st coconut milk and stir well.
  8. When the payasam starts boil from the sides remove from flame.
  9. Add cardamon powder and dried ginger powder and mix well.
  10. Roast cashew and kismis in ghee add add to the top of the payasam and keep the lid closed for 5 mins:

  12. The healthy, delicious Nurukku Gothambu Payasam is ready to serve.

Pachor is rice cooked in jaggery syrup with coconut. Achappam / Rose Cookies with Raw Rice

Achappam / Rose Cookies is a traditional Kerala deep fried snacks prepared using dedicated mold. It can be prepared by grinding soaked raw rice or with unroasted rice flour. This time I prepared Achappam / Rose Cookies using raw rice. Ingredients Raw Rice (White Rice) - 1 cup Egg - 1 no: Thick Coconut Milk - 3/4 cup Sugar - 4-5 tbsp Salt -  a pinch Sesame Seed - 2 tbsp Oil - as required for deep frying Preparation Method Wash clean and soak the raw rice for 2-3 hours. Drain the water and keep the rice in strainer for 20-30mins: to remove excess water. To the wet grinding jar of add rice, egg and grind by gradually adding the coconut milk. Add coconut milk as required. The batter should be smooth and without any grains and the consistency should be as that of dosa batter.  Transfer the batter to a large bowl and add sugar (you can add sugar as per the desired sweetness). Dried Shark (Unakka Sraavu) Curry

Ingredients Dried Shark - 250 gms Grated Coconut - 1 cup Chili Powder - 2 tbsp Coriander Powder - 4 tbsp Garam Masala - 1 tbsp Turmeric Powder - 1/2 tsp Coconut Oil - 2 tbsp Shallots (Small Onion) - 5 nos: (chopped) Curry Leaves - 4-5 stems Salt - as required Preparation Method Cut the shark into curry pieces and keep in water for 4-5 hrs: to remove the salt. Wash the shark pieces and keep aside. Roast the grated coconut in medium flame. Once the coconut become light brown add chili powder, coriander powder, garam masala and roast for 2mins: Remove from flame and keep aside to cool down. Once the coconut is in room temperature, grind that to a fine paste by adding some water. In a kadai (if you have clay pan, that will be good) cook the fish pieces for 10mins: by adding water and turmeric powder. (Water should be just to the level of fish pieces).
