Pineapple Pachadi

Ingredients
  • Pineapple (ripe) - 1 medium (crushed or finely chopped)
  • Green Chili - 2-3 nos: (chopped)
  • Turmeric Powder - 1/4 tsp
  • Grated Jagery or Sugar - 2 tsp (optional)
  • Grated Coconut - 1 cup
  • Cumin - 1/2 tsp
  • Mustard - 1/2 tsp
  • Yogurt / Curd - 1/2 - 3/4 cup
  • Coconut Oil - 2tsp
  • Red Chili - 2-3 nos:
  • Curry Leaves - as required
  • Salt - as required
Preparation Method
  1. Grind the grated coconut and cumin seeds to a very fine paste adding water, if required. Now add 1/4 tsp mustard to this paste and give 2-3 pulses. Keep this paste aside.
  2. Add crushed pineapple, green chili, turmeric powder, salt, 1/4 cup of water to a cooking pan and mix well. Add jagery or sugar if you like more sweet.
  3. Cook till the pineapple is done and water got evaporated, for 10-15 mins: in low flame.
  4. Add the ground coconut mixture and crushed mustard to the cooked pineapple, mix well and cook for a few minutes at low heat,until the raw taste of coconut is gone.
  5. Remove from the flame and let it to cool for 5mins:
  6. Add yogurt when slightly cooled, and mix well.
  7. In a pan bring coconut oil to heat, splutter mustard seeds, fry dry red chilies and add curry leaves. Pour it over the pachadi and mix well.
  8. The sweet Pineapple Pachadi is ready to serve with rice.

Pachor / Rice Cooked in Jaggery Syrup

Pachor is rice cooked in jaggery syrup with coconut. Pachor will be served in churches in central travancore (especially in Kottayam) during feast.   Ingredients Cooked Rice - 2 cups Jaggery (grated) - 3/4 cup Coconut (grated) - 3/4 cup Salt - a pinch Nutmeg + Cardamom + Dry Ginger + Cumin - 1 tsp (powdered) Ghee - 2 tbsp  Sliced Coconut - 1/2 cup Preparation Method Fry sliced coconut in ghee and keep aside. Melt jaggery in one cup of water, strain and keep aside. To a pan add cooked rice, melted jaggery, coconut and salt; mix well and cook till the coconut and rice absorbs the jaggery syrup and become thick. Add the spice powder and fried coconut along with ghee; mix well and remove from flame and allow to cool. Enjoy the sweet and warm Pachor. Note: You can use any rice, I used the matta (brown) rice.

Achappam / Rose Cookies with Raw Rice

Achappam / Rose Cookies is a traditional Kerala deep fried snacks prepared using dedicated mold. It can be prepared by grinding soaked raw rice or with unroasted rice flour. This time I prepared Achappam / Rose Cookies using raw rice. Ingredients Raw Rice (White Rice) - 1 cup Egg - 1 no: Thick Coconut Milk - 3/4 cup Sugar - 4-5 tbsp Salt -  a pinch Sesame Seed - 2 tbsp Oil - as required for deep frying Preparation Method Wash clean and soak the raw rice for 2-3 hours. Drain the water and keep the rice in strainer for 20-30mins: to remove excess water. To the wet grinding jar of add rice, egg and grind by gradually adding the coconut milk. Add coconut milk as required. The batter should be smooth and without any grains and the consistency should be as that of dosa batter.  Transfer the batter to a large bowl and add sugar (you can add sugar as per the desired sweetness). Dried Shark (Unakka Sraavu) Curry

Ingredients Dried Shark - 250 gms Grated Coconut - 1 cup Chili Powder - 2 tbsp Coriander Powder - 4 tbsp Garam Masala - 1 tbsp Turmeric Powder - 1/2 tsp Coconut Oil - 2 tbsp Shallots (Small Onion) - 5 nos: (chopped) Curry Leaves - 4-5 stems Salt - as required Preparation Method Cut the shark into curry pieces and keep in water for 4-5 hrs: to remove the salt. Wash the shark pieces and keep aside. Roast the grated coconut in medium flame. Once the coconut become light brown add chili powder, coriander powder, garam masala and roast for 2mins: Remove from flame and keep aside to cool down. Once the coconut is in room temperature, grind that to a fine paste by adding some water. In a kadai (if you have clay pan, that will be good) cook the fish pieces for 10mins: by adding water and turmeric powder. (Water should be just to the level of fish pieces).
