Layer Cake / Cold Cake

I was thinking about a different baking idea to welcome home my hubby dear, who was broad for 3months.... After some research I decided to do this  one and I, myself named it as Layer Cake / Cold Cake. I got inspired from the ideas of making chocolate cake and black forest cake. Hope you all will enjoy this Layer Cake / Cold Cake.

Ingredients
For Cake
  • Eggs - 3 nos:
  • Sugar - 170 gms
  • Self Raising Flour - 80 gms 
  • Coco Powder - 30 gms 
  • Vanilla Essence - 1tsp 
  • Melted Butter - 6tbsp 
For Layering
  • Egg White - 3nos:
  • Fresh Cream - 100 ml
  • Sugar - 3 tbsp
  • Powdered Sugar - 5 tbsp
  • Vanilla Essence - 1/2 tsp
  • Melted Mixed Fruit Jam - 4 tbsp
  • Chocolate Vermicelli - as required
Preparation Method
  1. Grease and dust a cake tray and keep aside.
  2. Sieve the flour and coco together.
  3. Beat the eggs and sugar very well until thick and double in quantity  (beat for 4-5 min.)
  4. Add the flour, melted butter, essence.
  5. Mix with a metal spoon.
  6. Pour the mixture into the prepared tin.
  7. Bake in a hot oven at 400degree F (200degree C) for 10 minutes. 
  8. Then reduce the temperature to 350degree F (180degree C) and bake for a further 10-12 minutes (or till the tooth pick inserted comes out clean).
  9. Allow cake to cool down.
  10. Cut the cake horizontally into 3 equal pieces. (cut very carefully by rotating the cake.)
  11. Dissolve the powdered sugar in 1/2 cup of lukewarm water and sprinkle it on the top of each pieces. (dont pour, just sprinkle).
  12. Repeat the process after 10mins: (This is for keep the cake super moist).
  13. Apply melted jam over the top of first and second pieces.
  14. Beat together egg white and sugar till it attain foam consistency.
  15. Add fresh cream and vanilla essence and beat for another 2-3mins:
  16. Using a spatula or thin knife spread the egg-cream mix over the first piece of cake. (try to add a thick layer).
  17. Keep the second piece exactly on the top of first piece and spread  egg-cream mix over that also.
  18. now keep the third piece exactly on the top of second piece and spread  egg-cream mix over that also.
  19. Apply the  egg-cream mix to the sides also.
  20. Garnish the cake with chocolate vermicelli or chocolate chips.
  21. Refrigerate the cake for 2-3hrs: in the lower rack.
  22. Cut into pieces of your choice and enjoy the yummy, soft, and cool Layer Cake / Cold Cake which melts in the mouth and having the taste of vanilla ice-cream.

Bangalore, India to Dublin, Ireland amidst Covid-19

We, (myself, my husband, and our ten years old daughter), travelled from Bangalore to Dublin through Paris on 13th August 2020, as my husband got an employment offer from Ireland. We all were excited about the relocation but cautious. Achappam / Rose Cookies with Raw Rice

Achappam / Rose Cookies is a traditional Kerala deep fried snacks prepared using dedicated mold. It can be prepared by grinding soaked raw rice or with unroasted rice flour. This time I prepared Achappam / Rose Cookies using raw rice. Ingredients Raw Rice (White Rice) - 1 cup Egg - 1 no: Thick Coconut Milk - 3/4 cup Sugar - 4-5 tbsp Salt -  a pinch Sesame Seed - 2 tbsp Oil - as required for deep frying Preparation Method Wash clean and soak the raw rice for 2-3 hours. Drain the water and keep the rice in strainer for 20-30mins: to remove excess water. To the wet grinding jar of add rice, egg and grind by gradually adding the coconut milk. Add coconut milk as required. The batter should be smooth and without any grains and the consistency should be as that of dosa batter.  Transfer the batter to a large bowl and add sugar (you can add sugar as per the desired sweetness).
