Tooti Footi Cake

Ingredients All purpose flour(Maida) - 1 1/2 cups Baking powder - 1/2 tsp Eggs - 2 nos Sugar - 3/4 cup Unsalted butter (in room temperature) - 100gm Salt - a pinch Vanilla Essence - 1/4 tsp Pineappale Essence - 1/4 tsp Tooti Footi - 100 gms: Preparation Method Preheat oven to 350 degree F (180 degree Celsius). Grease the baking tray with butter. Transfer the tooti-footi to a bowl and add 2tbsp maida, mix well and keep aside. Sieve together maida, baking powder and salt and keep aside. Beat the eggs using a hand held electric mixer in a large bowl. Add sugar and butter and mix at the lowest speed again for a 2-3 mins (till the sugar and butter dissolves). Add maida mix little by little to the egg-sugar-butter mix and blend at a medium speed for 4-5 mins. Add vanilla essence and pineappale essence,  blend for 1 more min. Bread Jamun

Bread Jamun is an easy to make dessert. Bread Jamun can be prepared at any time with the ingredients readily available at home. Ingredients White Bread - 20 slices Milk - 1/2 cup Sugar - 1.5 cup Water - 1 cup Cardamom - 2-3 nos: (powdered) Oil - as required to deep fry Rose Water - 3-4 drops (optional) Preparartion Method Remove the sides of the bread and powder with hand. Add milk (one spoon at a time) to the bread crums and knead well to make a thick dough. Make small lemon size balls from the dough; roll each ball with you plams so that no cracks are there in the ball. In a sauce pan boil water and sugar; boil till sugar syrup starts to thicken. Add cardamom powder and rose water and keep in low flame. In a wok, bring oil to heat and fry the jamun ball in medium flame, fliping carefully. Pizza Margherita

Pizza is an all-time favorite of kids. What about surprising our kids with the home-made pizza.!! Ingredients All purpose Flour - 2.5 cup  Yeast - 1/4 tsp  Sugar - 1.5 tsp  Salt - 1 tsp  Luke Warm Water - 3/4 cup  Olive Oil - 2-3 tbsp  Pizza Sauce - 1/3 cup  Mozzarella Cheese (grated) - 1.5cup  Fresh Basil - to garnish  Preparation Method Mix yeast and sugar in 1/4 cup of lukewarm water and keep aside for 10mins:. Mix flour and salt together.  Add yeast mix and olive oil to the flour and mix well.  Gradually add the remaining water and prepare a thick dough.  Knead on a floured surface with greased hands until the dough no longer sticks to your fingers.  Cover the dough with a damp cloth and keep aside for 1hr.  After 1hr knead the dough again with greased hands for 4-5 mins:  Preheat oven to 450 degrees F.  Divide the dough into 2 or 3 equal parts according to the desired pizza size.  Roll the dough into a circle.  Spread the pizza sauce over the cr

Sweet Corn Cheese Balls

Sweet Corn Cheese Balls is an easy to make and healthy tea-time snacks for kids.  Ingredients Sweet Corn - 200 gms: Grated Cheese - 100 gms Potato - 2 nos: (boiled and mashed) Pepper Powder - 1 tsp Oregano - 1 tsp Corn Flour - 2 tbsp Salt - as required Refined Oil - as required Preparation Method Cook sweet corn for 4-5 mins: and allow it to cool. Crush sweet corn and transfer to a big bowl. Add mashed potatoes, pepper powder, oregano, corn flour and salt to the crushed sweet corn and mix well. Add grated cheese and mix well. Make small lemon size balls from the corn-cheese mix and keep aside. In a wok bring oil to heat. Deep fry each balls till golden brown. Mango Mousse

Mango Mousse is an easy to make and refreshing dessert for the summer season. Ingredients Mango (ripe) - 4-5 nos: Fresh Cream - 100 ml Vanilla Essence - 1/4 tsp China Grass or Gelatin - 1 tsp (optional) Sugar - as required (optional) Preparation method Refrigerate the fresh cream, mixing bowl and beater blades for 15-20 mins: Soak China Grass or Gelatin in 3tbsp cold water in a heat proof bowl and keep aside. Puree the mango and keep aside.  In a pan boil 1 cup of water, place the soaked china grass or gelatin bowl in the boiling water and mix till china grass or gelatin is fully dissolved and keep aside. Take out the bowl from refrigerator, pour fresh cream into that and beat with electric beater or hand beater till the cream is soft and fluffy. Add powdered sugar (if required) as per your taste to the cream and beat for 2mins: You can add sugar if the mango is not really sweet or if you want mousse to be slightly more sweet.    Add mango puree, vanilla essence

Strawberry Cheese Cake (Eggless and No-Bake)

The Strawberry Cheese Cake is 100% eggless and does not require any baking. Hardly 5 mins of cooking is needed in the whole process.  Special thanks to my little angel for giving me the idea of Strawberry Cheese Cake. She was asking me to prepare the same for last 1 month.  Ingredients Arrowroot Biscuit – 15 nos: Butter (Melted) – 5 tbsp Fresh Strawberry – 2 box Cream Cheese – 200 gms Sugar – 5 tbsp Vanilla Essence – ½ tsp China Grass (Agar Agar) – 1 tbsp Cold Water – 4 tbsp Preparation Method Soak ½ tbsp china grass (agar agar) in 2 tbsp cold water in small heat resistant bowl and keep aside. Powder the biscuit; add melted butter to the biscuit powder and mix well so that the biscuit become moist. Spoon the biscuit to the bottom of the serving glass/bowl and press gently with back side of the spoon and refrigerate. Remove the leaves of the strawberry and cut each strawberry into 2 or 3 pieces. Chocolate Panna Cotta

Ingredients Fresh Cream - 200 ml Milk - 100 ml Sugar - 5 tbsp Vanilla Essence - 1 tsp Chocolate (Dark or Milk) - 100 gms (grated) Gelatin or Agar Agar - 1 tsp Cold Water - 2 tbsp Preparation Method Soak gelatin or agar agar in cold water and keep aside. In a pan mix fresh cream, milk and sugar and boil. When the mix starts to bubble remove from flame. Add vanilla essence and chocolate and mix till chocolate dissolves completely. Melt gelatin or agar agar in double boiling method. Add melted gelatin to the chocolate mix and stir well till it combined. Strain the mixture to single serving size cups and allow it to cool. Refrigerate for about 3-4 hrs: Unmould and garnish as per your taste. (I poured some chocolate sauce on that). Enjoy your Chocolate Panna Cotta. Note: Pure vegetarians can use agar agar instead of gelatin. 

Pineapple Juice

Pineapple is an excellent source of antioxidant vitamin C and will stimulate digestion process. But, most of us are hesitant to eat pineapple. Then why can't we try fresh home made pineapple juice. Ingredients Pineapple - 1 (ripped) Ginger - a small piece Sugar - 4-5 tbsp (optional) Ice cubes - as required Preparation Method Remove the skin of the pineapple and cut into cubes. In a blender add the pineapple cubes, ginger, sugar (if the pineapple is sweet, you can avoid sugar) and blend well. Strain the juice to remove the pineapple chunks. Add ice cubes to the serving glass and pour the juice to juice glass. Enjoy the healthy home-made Pineapple Juice.

Chilli Honey Prawns

Chilli-Honey Prawns is a simple, easy to make and delicious side dish for noodles or fried rice. Ingredients Prawns - 500 gms: (cleaned) Red Chilli Power - 2 tsp Pepper Powder - 1 tsp Turmeric Powder - 1/2 tsp Ginger-Garlic Paste - 1/2 tsp Onion - 2 medium (cut into cubes) Garlic - 1 pod (peeled and cut into cubes) Capsicum - 1 small (cut into cubes) Honey - 3 tbsp Oil - 3-4 tbsp Salt - as required Preparation Method Marinate the prawns with 1 tsp chilli powder, pepper powder, turmeric powder, ginger-garlic paste and salt and keep aside for 30mins: In pan bring oil to heat and shallow fry the marinated prawns for 4-5mins: and keep aside. Add garlic to the pan and saute till the raw smell goes off. Add onion and saute till onion become transparent. Add capsicum and saute for 2-3mins: Mix honey and 1tsp of red chilli powder and add to the pan and mix well. Add prawns, mix well. Adjust the salt and cook for 4-5mins: in low flame keeping the lid closed. Mix
