Strawberry Cheese Cake (Eggless and No-Bake)

The Strawberry Cheese Cake is 100% eggless and does not require any baking. Hardly 5 mins of cooking is needed in the whole process. 
Special thanks to my little angel for giving me the idea of Strawberry Cheese Cake. She was asking me to prepare the same for last 1 month. 


Ingredients
  • Arrowroot Biscuit – 15 nos:
  • Butter (Melted) – 5 tbsp
  • Fresh Strawberry – 2 box
  • Cream Cheese – 200 gms
  • Sugar – 5 tbsp
  • Vanilla Essence – ½ tsp
  • China Grass (Agar Agar) – 1 tbsp
  • Cold Water – 4 tbsp
Preparation Method
  1. Soak ½ tbsp china grass (agar agar) in 2 tbsp cold water in small heat resistant bowl and keep aside.
  2. Powder the biscuit; add melted butter to the biscuit powder and mix well so that the biscuit become moist.
  3. Spoon the biscuit to the bottom of the serving glass/bowl and press gently with back side of the spoon and refrigerate.
  4. Remove the leaves of the strawberry and cut each strawberry into 2 or 3 pieces.
  5. In a pan boil half cup of water and 5 tbsp of sugar; add strawberries to the sugar syrup and boil for another 2-3 mins:
  6. Strain the strawberry syrup and keep aside (we can use this as top layer).
  7. Once the strawberry is cool enough to handle, puree it and keep aside.
  8. Beat the cream cheese till it become soft; add strawberry puree and mix well. Add more sugar, if required, and beat well till everything is incorporated.
  9. Add vanilla essence and mix well.
  10. In a pan add water and allow it to boil, keep the cup containing china grass(agar agar) with water. Allow it to boil until you see a clear liquid when the china grass is dissolved completely.
  11. Add half of the melted china grass(agar agar) to the cheese-strawberry mix and stir.
  12. Fill cheese-strawberry mix to the serving glass/bowl on the top of the biscuit base (make sure that you leave little space on the top of the glass for the third layer); and refrigerate for 1-2 hours.
  13. Soak the rest of the ½ tbsp china grass (agar agar) in 2 tbsp cold water in small heat resistant bowl and melt it.
  14. Add the melted china grass (agar agar) to the reserved strawberry syrup and stir.
  15. Take out the serving bowl from refrigerate and pour the strawberry syrup as the top layer and refrigerate for another 2-3 hours.
  16. Easy yummy eggless no-bake Strawberry Cheese Cake is ready. Enjoy…..

Notes:

  • Cream Cheese is having sour taste; add more sugar to cheese-strawberry mix, if you want to make it more sweet. My personal preference is to retain slight sourness. 
  • I used Britannia Cream Cheese and is available in all the leading super markets and in BigBasket.
  • China Grass also is available in all the leading supermarkets.
  • If you are not pure vegetarian you can use Gelatin instead of China Grass.

Bangalore, India to Dublin, Ireland amidst Covid-19

We, (myself, my husband, and our ten years old daughter), travelled from Bangalore to Dublin through Paris on 13th August 2020, as my husband got an employment offer from Ireland. We all were excited about the relocation but cautious. Achappam / Rose Cookies with Raw Rice

Achappam / Rose Cookies is a traditional Kerala deep fried snacks prepared using dedicated mold. It can be prepared by grinding soaked raw rice or with unroasted rice flour. This time I prepared Achappam / Rose Cookies using raw rice. Ingredients Raw Rice (White Rice) - 1 cup Egg - 1 no: Thick Coconut Milk - 3/4 cup Sugar - 4-5 tbsp Salt -  a pinch Sesame Seed - 2 tbsp Oil - as required for deep frying Preparation Method Wash clean and soak the raw rice for 2-3 hours. Drain the water and keep the rice in strainer for 20-30mins: to remove excess water. To the wet grinding jar of add rice, egg and grind by gradually adding the coconut milk. Add coconut milk as required. The batter should be smooth and without any grains and the consistency should be as that of dosa batter.  Transfer the batter to a large bowl and add sugar (you can add sugar as per the desired sweetness).
