Millinairs Short Bread

Millionairs Short Bread - a three layer dessert with Crisp base, rich and chewy caramel in the middle and thick chocolate ganache at the top. This is an easy version of Millionairs Short Bread, which we can prepare with the ingredients available at home.. Lets make this for New Year lunch or dinner. I am sure that the family and friends, especially the kids love this dessert.

Ingredients
For Base
  • Arrow Root Biscuit - 200gms
  • Melted Butter - 100gms
For Filling
  • Butter - 100 gms:
  • Sugar - 100 gms:
  • Condensed Milk - 400 ml
  • Vanilla Essence - 1 tsp
  • Sea Salt - 1 tsp (optional)
For Topping
  • Dark Chocolate - 100 gms
  • Milk Chocolate - 100 gms
  • Vegetable Oil / Butter - 3 tbsp
Preparation Method
  1. Grease a square baking tin and line with butter paper on the bottom and sides.
  2. Powder the biscuits and add the melted butter and mix well till it become like bread crumps.
  3. Evenly spread the biscuit to the prepared tin and press with the back of  a spoon and refrigerate for 10-15 mins:
  4. Add butter and sugar to a non-stick pan.
  5. Stir continuously over low heat till butter dissolves.
  6. Add condended milk and vanilla essence; bring to boil stirring continuously over low heat.
  7. Boil till the caramel starts to thicken; remove from flame and bring it to room temperature.
  8. Evenly spread the caramel over biscuit base and gently tap the baking pan to level the top.
  9. Sprinkle the sea sallt over the caramel (optional).
  10. Refrigerate the pan for about 10-15 mins.
  11. Melt dark chocolate and white chocolate using double boil method.
  12. Remove melted chocolate from heat and add butter or vegetable oil and mix well.
  13. Evenly spread the melted chocolate over the caramel and keep aside to set. 
  14. Before the chocoalte has set hard, cut into slices.
  15. Serve Millionairs Short Bread as a Dessert or Sweet.

Add the spice powder and fried coconut along with ghee; mix well and remove from flame and allow to cool. Enjoy the sweet and warm Pachor. Note: You can use any rice, I used the matta (brown) rice.

Bangalore, India to Dublin, Ireland amidst Covid-19

We, (myself, my husband, and our ten years old daughter), travelled from Bangalore to Dublin through Paris on 13th August 2020, as my husband got an employment offer from Ireland. We all were excited about the relocation but cautious. Achappam / Rose Cookies with Raw Rice

Achappam / Rose Cookies is a traditional Kerala deep fried snacks prepared using dedicated mold. It can be prepared by grinding soaked raw rice or with unroasted rice flour. This time I prepared Achappam / Rose Cookies using raw rice. Ingredients Raw Rice (White Rice) - 1 cup Egg - 1 no: Thick Coconut Milk - 3/4 cup Sugar - 4-5 tbsp Salt -  a pinch Sesame Seed - 2 tbsp Oil - as required for deep frying Preparation Method Wash clean and soak the raw rice for 2-3 hours. Drain the water and keep the rice in strainer for 20-30mins: to remove excess water. To the wet grinding jar of add rice, egg and grind by gradually adding the coconut milk. Add coconut milk as required. The batter should be smooth and without any grains and the consistency should be as that of dosa batter.  Transfer the batter to a large bowl and add sugar (you can add sugar as per the desired sweetness).
