Kaipola / Kayapola

Kaipola or steamed Plantain cake is an easy to make authentic Malabar snacks. It can be made with few ingredients which is available at home. Kaipola is rich in flavor and highly nutritious and can be served as a complete meal for kids.
Ingredients
  • Kerala Banana (Nendran) - 2 nos: (ripe)
  • Egg - 4 nos:
  • Sugar - 4-5 tbsp
  • Cardamom Powder - 1 tsp
  • Cashew Nuts - as required
  • Raisins - as required
  • Ghee - as required
Preparation Method
  1. Cut banana into small cubes and keep aside.
  2. In a thick bottom pan heat 4-5 ghee and saute the banana in low flame till banana become golden brown in color.
  3. Saute cashew nuts and raisins in ghee and keep aside.
  4. Transfer the banana to a plat and keep aside till it cool down.
  5. In a bowl, whisk eggs, sugar and cardamom powder till egg become fluffy and sugar dissolved completely. (adjust sugar depending on the sweetness of banana)
  6. Add banana, cashew nuts and raisins to the egg mixture and mix.
  7. Heat a thick bottom non-stick pan and apply ghee generously.
  8. Keep the flame to low and pour the egg, banana mixture and spread evenly.
  9. Cook the mixture in low flame for 15 mins: in low flame keeping the lid closed.
  10. After 15 mins: flip the Kaipola without breaking and cook the other side for 5 mins: in low flame.
  11. Transfer the Kaipola to a serving plate allow it to cool down and cut into pie shape.
  12. Yummy malabar special Kaipola is ready to serve and snacks.

Add the spice powder and fried coconut along with ghee; mix well and remove from flame and allow to cool. Enjoy the sweet and warm Pachor. Note: You can use any rice, I used the matta (brown) rice.

We, (myself, my husband, and our ten years old daughter), travelled from Bangalore to Dublin through Paris on 13th August 2020, as my husband got an employment offer from Ireland. We all were excited about the relocation but cautious. Achappam / Rose Cookies with Raw Rice

Achappam / Rose Cookies is a traditional Kerala deep fried snacks prepared using dedicated mold. It can be prepared by grinding soaked raw rice or with unroasted rice flour. This time I prepared Achappam / Rose Cookies using raw rice. Ingredients Raw Rice (White Rice) - 1 cup Egg - 1 no: Thick Coconut Milk - 3/4 cup Sugar - 4-5 tbsp Salt -  a pinch Sesame Seed - 2 tbsp Oil - as required for deep frying Preparation Method Wash clean and soak the raw rice for 2-3 hours. Drain the water and keep the rice in strainer for 20-30mins: to remove excess water. To the wet grinding jar of add rice, egg and grind by gradually adding the coconut milk. Add coconut milk as required. The batter should be smooth and without any grains and the consistency should be as that of dosa batter.  Transfer the batter to a large bowl and add sugar (you can add sugar as per the desired sweetness). Mix well. Add salt and sesame seeds; mix well and keep aside for 30 mins: Heat oil in a deep bottom wide pan. While h
