Chicken Tortilla Wrap

Chicken Tortilla Wrap is as easy to make snack and can be send to kids in their lunch box. It is a complete meal and can be carried as a handy snack or meal while travelling.

Ingredients
  • Tortilla Wraps - 6 nos:
  • Boneless Chicken -  500 gms: (cut into thin strips)
  • Pepper Powder - 2 tbsp
  • Chilli Powder - 1 tbsp
  • Ginger-Garlic Paste - 1 tbsp
  • Tomato Sauce - 4 tbsp
  • Mayonnaise - 3 tbsp 
  • Onion - 1 (cut into thin slices)
  • Tomato - 1 (cut into thin slices)
  • Carrot - 1 (cut into thin slices)
  • Jalapeno - 1 or 2 (cut into thin slices)
  • Olives - 1 or 2 (cut into thin slices)
  • Salt - as required
  • Bread crumbs - as required
  • Oil - as required
  • Chips - as required (optional)

Preparation Method

  1. Wash and clean the chicken, drain excess water and keep aside. 
  2. To a mixing bowl add pepper powder, chilli powder, ginger-garlic paste, salt, 1 tbsp tomato sauce and mix well.
  3. Add chicken strips and mix well and keep aside for half and hour.
  4. Coat the chicken with bread crumbs and keep aside.
  5. Heat oil in pan and deep fry the chicken,
  6. Remove the chicken from oil and keep in kitchen towel to remove excess oil.
  7. Mix 3 tbsp of mayonnaise and 3 tbsp of tomato sauce and keep aside.
  8. Heat the tortilla as per the instruction given in the packet and keep aside.
  9. Spread 1 tbsp of mayonnaise-tomato mixture on one side of the tortilla wrap.
  10. Arrange thin layer of onion, carrot, tomato, olives and jalapeno in the middle of the wrap.
  11. Place 5-6 strips of chicken strips on the top of vegetables
  12. Place a thin layer of chips over the chicken.
  13. Spread some mayonnaise over the chips.
  14. Tightly wrap the tortilla (you can secure the wrap with a tooth pick or can cover with aluminium foil to hold the fillings together).
  15. Enjoy the Chicken Tortilla Wrap as a snack or complete meal.

Bangalore, India to Dublin, Ireland amidst Covid-19

We, (myself, my husband, and our ten years old daughter), travelled from Bangalore to Dublin through Paris on 13th August 2020, as my husband got an employment offer from Ireland. We all were excited about the relocation but cautious. Achappam / Rose Cookies with Raw Rice

Achappam / Rose Cookies is a traditional Kerala deep fried snacks prepared using dedicated mold. It can be prepared by grinding soaked raw rice or with unroasted rice flour. This time I prepared Achappam / Rose Cookies using raw rice. Ingredients Raw Rice (White Rice) - 1 cup Egg - 1 no: Thick Coconut Milk - 3/4 cup Sugar - 4-5 tbsp Salt -  a pinch Sesame Seed - 2 tbsp Oil - as required for deep frying Preparation Method Wash clean and soak the raw rice for 2-3 hours. Drain the water and keep the rice in strainer for 20-30mins: to remove excess water. To the wet grinding jar of add rice, egg and grind by gradually adding the coconut milk. Add coconut milk as required. The batter should be smooth and without any grains and the consistency should be as that of dosa batter.  Transfer the batter to a large bowl and add sugar (you can add sugar as per the desired sweetness).
